Cauliflower Pizza with Salami, Asparagus, and Dairy Free Cheese


Preheat Oven: 415 degrees (400 degrees for convection)

Prep time: 15 minutes

Bake time: 20-35 minutes

Makes: 6 Slices


2 cup Riced Cauliflower (1 large cauliflower)

2 each Large Eggs

3 tablespoons coconut flower

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon dried oregano and thyme

1 teaspoon onion and garlic powder


Rice 1 chopped cauliflower florets in food processor.

Cook in a saute pan with 1/4 cup of water for 5-8 minutes or cook in the microwave for 5 minutes.

Squeeze liquid out of riced cauliflower with a towel or cloth napkin. The dryer the better!



Mix all ingredients together and press out dough on to a lined (parchment) pizza pan or baking sheet.

note: Press out evenly; 1/4 of inch.

Bake crust for 20-30 minutes; until golden brown.

Top crust with desired toppings and bake for 5-8 minutes or until cheese melts.


Garlic Rosemary Red Pepper Sauce


1- 8oz jar of roasted red pepper; drained

3 large cloves of Garlic; minced (hint: use microplane)

1 sprig rosemary; finely chopped

Pinch of Salt


Blend in food processor until smooth! Fantastic on sandwiches and burgers as well!!


Toppings:

Salami

Asparagus

Dairy-Free Cheese (daiya- mozzarella style)

Drizzle of Olive Oil
