Lemon Poppy Seed Vinaigrette


1/4 Cup Lemon Juice

Zest of one Lemon

1/2 Teaspoon onion powder (sub: 1 Tablespoon minced sweet onion)

1 Tablespoon Poppy seeds

1 Tablespoon Honey

1/2 Teaspoon Dijon

1/2 Teaspoon Salt

1/3 Cup Avocado and Olive Oil Split


Using a mixing bowl and whisk, place all ingredient except the oil in the bowl

Slowly add the oil by drizzling while whisking until it is emulsified.

Dress a salad right away or store for future use. Store up to five days.


Notes:

Feel free to play around and add different spices and herbs.

Leave out the honey for a tangier dressing.

Make a double or triple batch for the week to save time!
